The Fish Comes In Whole

No fillets sitting under plastic. Snapper comes in whole, gets scored by hand, and goes into the fryer the same day — skin on, bones in, the way it's supposed to be.

The Drum Goes On Friday

Out back, over pimento wood and charcoal, the jerk drum runs Friday through Sunday. No gas, no shortcuts — just smoke, time, and a marinade nobody's writing down.

Rice and Peas, All Afternoon

Coconut milk, kidney beans, thyme, and a whole scotch bonnet dropped in whole for heat without the burn. It simmers for hours — there's no fast version of this.
